How It’s Made

Where It’s Butchered From
The hand of pork is taken from the front leg of the pig, encompassing the shoulder and part of the foreleg. This cut is prized for its marbling and rich flavour, making it ideal for roasting and slow cooking.
Cooking Instructions
Cooking our hand of pork is straightforward and rewarding:
- Roasting: Preheat your oven to 180°C (160°C fan). Season the pork generously with salt, pepper, garlic, and herbs. Place in a roasting pan and roast for approximately 25-30 minutes per 500g for medium-rare, adjusting as per your preference. Let it rest for 15-20 minutes before carving.
- Slow Cooking: Place the hand in a slow cooker with onions, carrots, celery, garlic, and your favourite herbs. Add broth or wine, cover, and cook on low for 6-8 hours until tender and falling off the bone.
Storage Instructions
To maintain the freshness and quality of your hand of pork:
- Refrigerate: Store in the coldest part of your refrigerator at 1-4°C and consume within 2-3 days of purchase.
- Freeze: Wrap tightly in plastic wrap or foil, or place in a freezer-safe container. Freeze for up to 3 months. Thaw overnight in the refrigerator before cooking.
