Cooking Instructions
Cooking our lamb neck fillet is simple and rewarding:
- Slow Cooking: Brown the fillet in a heavy-bottomed pot with a little oil over medium-high heat. Add vegetables, broth, wine, and herbs. Cover and simmer on low heat for 2-3 hours, or until the meat is tender and falls apart easily.
- Braising: Preheat your oven to 160°C (140°C fan). Sear the fillet in a hot pan for 2-3 minutes on each side. Transfer to a roasting pan, add vegetables, stock, and seasonings. Cover with foil and braise in the oven for 2.5-3 hours until tender.
