How It’s Made

Where It’s Butchered From
The lamb shank is cut from the lower part of the lamb’s leg, just below the knee. This cut is known for its connective tissue and marrow, which break down during slow cooking to create a rich, succulent, and flavourful dish.
Cooking Instructions

- Slow Cooking: Brown the lamb shank in a heavy-bottomed pot with a little oil over medium-high heat. Add vegetables, broth, wine, and herbs. Cover and simmer on low heat for 2-3 hours, or until the lamb is tender and falls off the bone.
- Oven-Braising: Preheat your oven to 160°C (140°C fan). Sear the lamb shank in a hot pan for 2-3 minutes on each side. Transfer to a roasting pan, add vegetables, stock, and seasonings. Cover with foil and braise in the oven for 2.5-3 hours until tender.
