How It Is Made

Where It Is Butchered From
Silverside is cut from the hindquarter of the cow, specifically from the hind leg. It is a lean cut with a fine grain, making it ideal for slow cooking and roasting.
Cooking Instructions

- Roasting: Preheat your oven to 180°C (160°C fan). Season the silverside with salt, pepper, and your favourite herbs. Place in a roasting tin and cook for 20 minutes per 450g, plus an additional 20 minutes for medium-rare, or adjust the time according to your preferred doneness.
- Pot Roasting: Brown the silverside in a hot pan with oil. Transfer to a pot with vegetables, herbs, and stock. Cover and cook on the stovetop or in the oven at a low temperature for 2-3 hours until tender.
- Slicing: Once cooked, slice thinly against the grain for the best texture and flavour.
Storage Instructions

- Refrigerate: Store in the coldest part of your fridge at 1-4°C and consume within 2-3 days of purchase.
